mental break after breakfast (thought obsession-anxiety attack)

going to moderate food intake a bit

slept from 10pm to 7 am - snack at bedtime the night before was 1/2 cup beans and avacado

didn't get to sleep until 2 am approx. - dinner had mayo (contains rice syrup and soy) gave snack of beans and avacado at bedtime
We are starting to see a correlation between his not sleeping and sugar intake in the evening)

Slept all night
dinner the previous day had no mayo, dressing, carbs or sugar of any kind...
Jan. 20
Slept good, woke up once to pee and didn't seem to know what to do afterward, so directed back to bed, was in kitchen, so asked if he was hungry, he said yes, so gave him about 2T of beans and avacado.
up at 7ish, doing pretty good, but not answering questions, like he doesn't know how to. I told him and showed him how to answer yes and no with his head, nod or shake and he seemed to understand and shake his head yes for a question.
(he has told me he thinks he got a good nights sleep) he's talking, maybe he just needed to wake up more

not able to get to sleep right away...awake til midnight at least
not sure if low carbs/sugar in the evening is helping

not sure if he slept at all last night, probably did some, but not sure how much...
while eating breakfast, pointed spoon at shirt with his spoon(pinkish red in color) and told me that what was bothering him was that the spoon was too red, so changed shirt and all was better and able to finish meal using spoon...
around 10-11am he started showing signs of thought obsession (his brother taking a gun and shooting him) like he has a hard time separating fact and fiction of the thought...talk therapy to get him calmed down...
around 1pm during his lunch he started waving his fork in the air, like he was going to stab something, like to relieve pressure of thought, gave him a spoon and he was better and able to finish the meal, i would have given him more food, but still agitated and walked into living room. He freaked out, putting his hands on his ears and went down to the floor. (thought obsessing still- not sure what about) talk therapy, weighted blanket...had him move to the couch eventually for comfort...after about an hour went for walk, only little bit of distress, when got home he went to room where it is dark and quiet and might have taken a little nap, but not sure, he was pretty still and quiet.
around 6pm, gave dinner (broccoli and black beans(seasoned), with salt and a little honey) so far no reactions, sitting watching a show about dinosaurs in silent mode with ear plugs in too.
